I will start it off with posting what I know of / like then you guys can post whatever you have and it will be added to OT + your name will be added to the thread as credit. Tweaks and packages
AppCake - The main Installous alternative, for getting apps from the appstore.
Accelerate - Makes animation speeds faster on your iPhone / iPod / iPad.
AndroidLock XT - Android pattern unlock screen for your iDevice.
Zephyr - Awesome multitasking gesture.
Zeppelin - Change the carrier logo on your device.
Barrel - Changes the transition animation when switching your apps from page to page.
AppCent - Instead of showing the name of the app while it's downloading it displays the percent of how much of it is done downloading.
iFile - Move and edit files within your device, kinda like an ssh client but on your iDevice.
iCoughtU - Whenever someone guesses the wrong password it takes a picture of them with the front facing camera.
3G Unrestrictor - Tricks apps into thinking you're using wifi, when really you're using your 3G network.
SBSettings - Makes the notification center useful, do things such as clear memory, change brightness, turn off wifi, all from your home screen.
Bridge - Allows you to import music without plugging your device into a computer.
Overachiever - Unlocks certain achievements in gamecenter. *Beware of possible ban when using this*
PasswordPilot - Inserts your password into itunes making it so you don't have to type it every time.
GridLock - Lets you place icons where ever you want, no more auto arrange.
